Nachos. My favorite snack/ dinner/ lunch of all time. There's a restaurant in Long Beach, NY called, Taqueria & Tequila Bar, that makes the BEST nachos I've ever had in my life (and they make amazing margaritas). So naturally, I had to try to make my own. These come pretty close! The homemade tortilla chips are what sets these apart and makes these the best dang nachos you'll ever make.

Half Homemade Tortilla Chips Ingredients:
4 large store bought tortillas
Olive oil
Salt + pepper
Tortilla Chips Instructions:
Cut tortillas into small triangles.
Place the triangles on a pan and coat them in olive oil, salt and pepper.
Using your hands, toss the tortillas to ensure they're all coated with the olive oil and seasonings. You can do this with a spoon instead of your hands but I don't think a spoon helps to coat the tortilla's as well.
Bake at 350 degrees for 12-15 minutes or until they’re nice and crispy. You want them to be brown, but not burnt.
Nachos Toppings:
1 can of black beans
Pico de gallo (you can buy this pre-made or make it homemade. * Follow my recipe here: https://www.suppersforsunday.com/post/chipotle-inspired-pico-de-gallo
1 bag of shredded mozzarella
2 cups of shredded chicken (I bought a rotisserie for this)
Sour cream
Guacamole
Nachos Instructions:
- Instructions for topping nachos probably isn't necessary, especially since it's really by preference BUT below is the order of how I stacked the toppings.
Stack the ingredients in this order:
Chips
Black beans
Chicken
Mozzarella cheese
Repeat until you're out of these ingredients
Bake the nachos at 350 degrees for 10-12 minutes and then broil on high for 5 minutes
Remove the nachos and add the pico de gallo, guacamole and sour cream.
Serve with a Margarita :)
