Shrimp Rolls


I had been dreaming of warm summer days for months! This shrimp salad in a toasted bun is the taste of summer that I’ve been craving. Healthier option? Serve in lettuce wraps instead of a bun. Ingredients:

•Shrimp, 1 lb

•Olive Oil, 1 Tbsp

•Salt, 1 tsp

•Freshly ground pepper, to taste

•Red onion, 1/2 - finely chopped

•Cellery, 4-5 ribs - finely chopped

•Dried dill, 1 Tbsp

•Old Bay Seasoning, 1 Tbsp

•Garlic powder, 1/2 tsp

•Mayonnaise, 1/2 cup

•Dijon mustard, 1 Tbsp

•Romaine lettuce, a few leaves

•Lemon juice, just a squeeze


Instructions:

•Steam the shrimp with some salt and the Old Bay Seasoning - this should take about 5-10 minutes.

•Once shrimp is fully cooked, drain and remove tails. Then chop the shrimp into small pieces.

•Placed the chopped shrimp into a large mixing bowl, then add chopped celery, red onion, dill, and pepper. Mix.

•Add olive oil, dijon mustard, mayo and a squeeze of lemon juice. Mix.

•Spread butter on both sides of a bun and toast on the stove. Then place some lettuce in the bun, and scoop some shrimp salad over it. Serve this warm or cold with fries or chips!
