
Shredded BBQ Chicken Lettuce Wraps 🥬 One of the BEST Instant Pot recipes I have is for shredded chicken thighs (I’ll do a post on this soon). I cook them for 20 minutes on a Sunday and have chicken for the rest of the week. For this meal, I smothered the chicken in some BBQ sauce & made these super easy/ satisfying lettuce wraps; but they’d be even better on a bun. BBQ chicken, coleslaw, shredded mozzarella cheese + some crispy fried onions are the simple ingredients needed for this guilt free BBQ 🍗
Ingredients:
•Fresh Butter lettuce, 2 heads
•Coleslaw, MWFY (quick recipe below)
•Your favorite BBQ Sauce, MWYH
•Pre-cooked chicken, MWYH
•Pre-shredded mozzarella cheese, MWYH
•Crispy fried onions, MWYH
Quick Coleslaw Ingredients:
•Shredded cabbage, 1 bag
•Apple Cider Vinegar, 2 tbsp
•Mayonnaise, ¼ cup
•Dijon mustard, 2 tbsp
•Salt & pepper, MWYH
*MWYH = Measure with your Heart 🤍
Instructions:
•Pull individual lettuce leaves off and wash & let dry
•Layer the coleslaw, BBQ chicken & mozzarella cheese
•Sprinkle crispy fried onions over the top & enjoy!
