No Bake Protein Packed B-Day Cake Bites


When life gets busy, I love having protein bites in my refrigerator. They’re a sweet treat that I don’t feel guilty eating, and they fill me up! My sister in-law got me hooked on these years ago. Her recipe calls for other yummy ingredients like chocolate chips and craisins. I’ll share her original recipe another time but consider this a spin-off of that! Thanks for the inspo, Tara ;) In the meantime, give these no bake protein packed B-day cake bites a shot!


Ingredients:

  • 1 cup quick oats

  • 1 cup of shredded coconut

  • 1 tbsp chia seeds

  • 2 tbsp water

  • ½ scoop of protein powder

  • 2 tsp clear vanilla extract

  • 3/4 cup of cashew butter (Or almond butter or peanut butter)

  • 1 tbsp coconut oil

  • 1/3 cup rainbow sprinkles


Instructions:

  • Add the chia seeds and water into a small bowl or cup and let sit for 5 minutes.

  • Add the quick oats and shredded coconut into a food processor. Pulse with both the chopping and grinding options, switching back and forth about every 10 seconds. You want the coconut and oats to be a powdery consistency.

  • Once the oats and coconut are the correct consistency, dump it into a bigger bowl to begin adding the other ingredients.

  • Microwave the cashew butter and coconut oil together in a bowl for 30 seconds, then stir so that that coconut oil is mixed in with the cashew butter.

  • Add to the oat & coconut mixture. Note: You can use any type of nut butter that you want. I like the cashew flavor, but I’ve made these with peanut butter before, and it makes them a little sweeter. Any nut butter is good!

  • The chia seed mixture should be a thick, pudding consistency at this point. Once it is, add it to the bowl.

  • Add the clear vanilla extract and the protein powder. Note: clear vanilla extract is what’s going to give it that birthday cake flavor. It’s worth finding the clear stuff over regular vanilla extract, but if that’s all you have, that’s fine!

  • Mix everything together until the mixture is sticking together.

  • Use a small cookie scoop to spoon out the bites. Then roll in your hands to shape it into a ball and to help the ingredients stick together.

  • Refrigerate for at least 3 hours before eating. Keep bites refrigerated.

  • Makes about 16 bites!
