Mediterranean Quinoa Bowl

This Mediterranean Quinoa Bowl was inspired by a lunch I used to order almost every day in NYC. Sadly, the café took it off their menu, so I had to attempt to make my own. This recipe is pretty dang close & the Trader Joes Green Goddess dressing is KEY to making it taste just like that NYC café bowl. However, I have created my own dressing that may be even better. That recipe is coming soon, but use the Trader Joes dressing in the meantime ;)


Ingredients:

•3 cups steamed kale

•1 cup cooked quinoa

•1/2 cup chickpeas

•1/2 cup grape tomatoes

•1/4 cup brussels sprouts, chopped & roasted

•1/4 cup feta cheese

•MWYH*, Trader Joe’s Green Goddess dressing


*MWYH = Measure with your Heart 🤍


Instructions:

•Steam your kale

•Drain & rinse can of chickpeas

•Cook quinoa

•Chop brussles sprouts. Season with salt, pepper, garlic powder & olive oil. Bake in oven at 375 degrees for 15-20 minutes. Let cool.

•Place all prepped ingredients listed above into a bowl, mix it all up & enjoy!
