Thanksgiving leftovers… but better 🍝
Make gnocchi with all those leftover mashed potatoes!
Ingredients:
2 cups of the leftover mashed potatoes
1 1/4 cups of flour
1 egg
Instructions:
Add mashed potatoes, egg, and a pinch of salt to a large mixing bowl.
Add ¼ cup of flour to the bowl and gently stir to combine. The amount of flour you need will vary based on your mashed potato recipe. I recommend adding flour ¼ cup at a time until the dough feels right. When the dough is ready, it should be soft and pliable, but not sticky.
Lightly flour a large cutting board then use a knife to divide gnocchi dough into 4 sections. Place one section of dough on the cutting board. Using your hands, roll it into a long rope, a little less than 1" thick. Dust with flour if it gets sticky.
Use a knife to cut the rope of dough into 1" pieces and transfer the cut gnocchi to a lightly floured sheet pan. Repeat the process with the remaining dough.
Bring a large pot of water to a boil and add a pinch of salt.
Add gnocchi to boiling water give them a stir. Cook for 2-3 minutes until gnocchi’s float to the top of the water. Scoop them out and toss in sauce. Serve with warm bread and enjoy 🤌🏻
