This particular Sunday supper was all about St. Patrick’s Day. This Irish soda bread is super easy to whip up while the corned beef and cabbage slow cook.☘️🍞
Ingredients:
•All-purpose flour, 4 - 4 1/2 cups
•Sugar, 1 tbsp
•Salt, 1 tsp
•Baking soda, 1 tsp
•Butter, 4 tbsp - cubed + slightly softened
•Raisins, 1 cup
•Large egg, 1 - lightly beaten
•Buttermilk, 1 3/4 cups
Instructions:
•Preheat the oven to 425°F.
•In a mixing bowl, whisk 4 cups of the flour together with the sugar, salt, and baking soda.
•Using your hands, work the butter into the flour mixture. Then add in the currants or raisins.
•Make a well in the center of the flour mixture. Add the beaten egg + buttermilk. Mix with a spoon until the dough is too stiff to stir. If dough is really sticky, mix in some more flour.
•Use floured hands, shape the dough into a ball shape.
•Transfer the dough to a large, lightly greased baking sheet.
•Then use a knife to score the top of dough about an inch and a half deep in an "X" shape.
•Transfer to the oven and bake at 425°F until the bread is golden and the bottom sounds hollow when tapped, about 35 to 45 minutes.
