BBQ Chicken Baked Sweet Potatoes

Chicken Ingredients:

•Chicken thighs, 3-5 lb

•Chicken broth, 1 cup

•Salt, 1 tsp

•Fresh ground pepper, 1/2 tsp

•Garlic powder, 1 tsp

•TJ’s @traderjoes Vegan Chicken-less Salt, 1 tsp


Chicken Instructions:

•Place the chicken in the instant pot and pour the chicken broth over the chicken.

•Add all seasonings over the top

•Close the lid. Pressurize on high for 10 minutes. Natural release for 5.

•Quick release the remaining pressure and remove chicken.

•Place cooked chicken on a cutting board and shred, then move shredded chicken into a bowl.

•Add your favorite BBQ sauce (I used @ribrackbbqsauce) and mix!


Quick Coleslaw Ingredients:

•Shredded cabbage or coleslaw mix, 1 pre shredded bag

•Apple Cider Vinegar, 2 tbsp

•Mayonnaise, ¼ cup

•Dijon mustard, 2 tbsp

•Salt & pepper, MWYH*


*MWYH = Measure with your heart


Baked Sweet Potatoes Instructions:

•Clean/rinse potatoes

•Place on a cookie sheet and bake at 425 degrees F for 25-35 minutes, depending on size

•Remove from oven, let cool for 5-10 minutes

•Cut cooked potato in half. Add BBQ chicken, coleslaw, shredded mozzarella cheese and sprinkle some chopped red onion.
