Banana Apple Bread


I know what you're thinking... "Another Banana Bread?!" YUP!


I have a bad habit of buying bananas and never eating them, and I know others are guilty of this too. I don't want them to go to waste. So, I keep tweaking Banana Bread recipes to use up my ripe bananas. I also have a habit of going apple picking in the fall and coming home with too many apples. So this dilemma has led me to Banana Apple Bread. This bread is perfect to savor with a warm cup of coffee on a crisp fall morning.


Ingredients:

  • 4 ripe bananas - mashed

  • 1/2 cup mayonnaise

  • 1 egg

  • 1 1/2 cup flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 3/4 cup sugar

  • 1/4 cup pure maple syrup

  • 2 peeled and chopped honey-crisp apples

  • 1/4 tsp nutmeg

  • 1/4 tsp pumpkin spice

  • Dash of ground cinnamon


Instructions:

  • Pre-heat oven to 350 degrees and grease an 8 X 8 inch baking pan. Or use parchment paper.

  • Mash the bananas in large bowl. Add egg, maple syrup and mayonnaise. Then whisk.

  • In a separate bowl, combine flour, baking soda, salt, sugar, nutmeg, pumpkin spice and cinnamon. Mix.

  • Slowly add the dry ingredients into the banana mixture and mix until combined. Then mix in the chopped apples.

  • Pour the mixture into the pan and bake for 50 - 60 minutes. Once done, allow to cool for 10 minutes before slicing.
