Asparagus Wrapped in Puff Pastry


This is definitely one of my favorite side dishes. Asparagus Wrapped in Puff Pastry is so simple and delicious, but is also makes a pretty addition to any plate. I get bored with vegetable sides. So, when I find new ways to spice them up I get excited. Asparagus is so yummy on it's own when it's roasted with basic ingredients like olive oil, salt and pepper, but wrapping it warm, buttery puff pastry just makes sense. The outside of the pastry gets salty and crunchy once it's cooked, while the inside remains buttery and doughy. I also prefer the ends of my asparagus to be nice and crispy when I make it like this, so these ingredients compliment each other perfectly!


Ingredients:

  • 1 bunch of asparagus

  • 1 sheet of puff pastry

  • Salt

  • Freshly ground pepper

  • Garlic Powder

  • Grated Parmesan cheese

  • 2 tbsp butter

Instructions:

  • Remove puff pastry from the freezer 30 minutes prior to assembly.

  • Pre-heat oven to 375 degrees and grease a 9 X 13 inch pan, or use a sheet of non-stick aluminum foil.

  • Wash and dry the asparagus then cut the ends.

  • Cut long strips of the puff pastry vertically; about 3/4 inches wide.

  • Bundle 3-4 asparagus together. Beginning 3/4 of the way down, begin to wrap the strip of puff pastry around the asparagus; twisting it and moving in a downward motion so that it covers a majority of the asparagus. Be sure to leave the tops of the asparagus exposed.

  • Continue to wrap the asparagus bunches with the puff pastry and place each completed bundle onto the pan.

  • Microwave the butter in a microwave safe dish for about 30 seconds or until the butter is completely melted. Using a cooking brush, brush the butter over the asparagus and puff pastry, front and back.

  • Sprinkle each asparagus bundle with the salt, pepper, garlic powder and Parmesan cheese.

  • Bake for 15-20 minutes, or until the puff pastry is golden brown and the tops of the asparagus are crispy.

  • Allow to cool for 5 minutes and serve warm.
